Quick Coconut Pancakes

Another quick recipe from @mary_fit_ that tastes even better than it looks!

Try these protein packed pancakes for breakfast or after training.


  • 50g Oat Flour
  • 10g Coconut Flour
  • Pinch of cinnamon 
  • 3g Instant Coffee 
  • 15g Natural Yoghurt
  • 20g Coconut Water 
  • 110g Egg Whites
  • 1/2 Teaspoon Baking Powder
  • Dark Chocolate Drops


In a bowl, mix the two flours, the instant coffee, the cinnamon, coconut water and liquid egg whites. Knead the mixture until a smooth and lump free. 

Mix in the drops of dark chocolate and baking powder so it is evenly spread throughout the mixture.

Pour the mixture onto a hot non-stick pan and immediately reduce heat to low.

Cook with lid on and flip when the top part of the pancake begins to cook slightly. Finish cooking for 10-15 seconds on the remaining side.

Transfer to a plate and garnish according to your tastes

I recommend cooking with coconut oil for two reasons:

1. It prevents sticking

2. The oil gives flavour and also enhances the aroma
